Here's a yummy side dish that even your picky eater may like! This easy baked pineapple recipe matches perfectly with Easter dinner, and yet it's so simple to whip up anytime. It's an annual staple on the table for our family's Easter dinner. I think "pineapple pudding" is a great way to present it to the kids! Baked Pineapple Recipe
Ingredients:
2 Tablespoons cornstarch or arrowroot powder (also known as arrowroot starch or flour)
1/4 cup water
2 eggs, beaten
1 (15 1/4 ounces) can crushed pineapple, undrained
1/2 cup sugar (or 1/4 cup honey or agave)
1 teaspoon vanilla
Butter or dairy-free buttery spread (about 1 to 2 Tablespoons)
Cinnamon
Directions:
Using a spoon, mix cornstarch with water until smooth. Add eggs and blend well. Add pineapple, sugar and vanilla and mix well. Pour into a small casserole dish (an 8 x 8 dish works great). Dot with butter and sprinkle with cinnamon.
Bake at 350 degrees for 1 hour.
